There are several settings most commonly affecting the appearance of the receipts:
Under ≡ menu → Settings → Camera, make sure that the "Convert to Grayscale" toggle is not active.
When scanning your receipt, as soon as you take the picture, tap the "Enhance" button to disable automatic enhancement, for example:
